With the thousands of machines and brewing devices on the market, it is often difficult to navigate the terrain; and once you finally decide upon your preferred brewing method, how next to optimize its capabilities for a consistently excellent cup? First, a few basic principles that apply to any and all brewing methods:

  • If you're grinding your own beans, try to grind them as close to the brew time as possible.
  • Use fresh water-(filtered or spring, if possible)-but do not use pre-boiled or hot tap water.
  • Temperature also affects the coffee's taste: too hot, and it might taste bitter; too cool, and you won't extract its fullest flavor. Range: 195-205°F.
  • The ever-present question of ratio: The Coffee Research Institute recommends 2 tbsp of ground coffee per 6 oz of filtered water as a general rule of thumb.
  • Try not to let your coffee sit on the burner for more than 20-25 minutes or so. And REALLY try not to reheat your coffee-the taste will be warped beyond recognition.
